Tollbua is Matigruppen’s first opening and the flagship of the group’s portfolio. Christopher Davidsen’s gourmet bistro focuses on local ingredients with flavours from around the world. The food is authentic and innovative, with a clear quality profile. We also have one of the city’s best wine cellars, curated by Food and Drink director, Henrik Dahl Jahnsen.

Due to increasing demand, Tollbua has expanded its catering services. We are now taking the next step by establishing a dedicated catering department, with the ambition to further develop both our customer base and product range.

This is a unique opportunity to be part of an exciting new chapter from the very beginning. We are looking for an experienced chef who wants to play a key role in building structure, brand, and quality for Tollbua Catering. You will also be actively involved in cooking and contributing to great dining experiences for a wide range of events and activities within Tollbua’s event space, Sørfløyen.

Responsibilities

As Head Catering Chef, you will be responsible for running the department from A to Z, including:

  • Further developing the catering offering through new products and services
  • Overall responsibility for catering operations, from enquiry to delivery
  • Production of catering menus with consistently high quality
  • Ensuring strong routines for hygiene, food safety, and organisation
  • Contributing to menu development and seasonal updates, in line with Tollbua’s culinary profile
  • Purchasing, inventory management, and cost control
  • Planning and execution of logistics and deliveries
  • Further development of the catering offering through new products and services

In addition, you will:

  • Contribute to the planning and execution of event menus and functions in Tollbua’s event space, Sørfløyen

Qualifications

  • Fluent in Norwegian and English, both written and spoken
  • Relevant trade certificate or approval to work with food production in Norway


Experience

  • Minimum five years of relevant experience within catering, hotel and/or restaurant operations, or event-based food production
  • (Strong candidates with slightly less experience will also be considered)
  • Experience with customer service
  • Solid competence within professional kitchen operations, including: Purchasing and supplier follow-up, Inventory management and Cost control
  • Valid driver’s licence

  • Strong professional skills and a high level of attention to detail
  • Structured and well-organised, with the ability to plan ahead
  • Flexible and solution-oriented in a dynamic working environment
  • Strong collaboration and communication skills
  • Eager to learn and proactive – this is a growing department that requires clear leadership!
