Head Sommelier
Do you have the ambition, passion, and skill to join one of the most successful restaurant openings in Trondheim’s history? Since its launch in February 2024, Tollbua has been fully booked every week and has received rave reviews across the country and beyond. We are now looking for an experienced sommelier to manage our wine cellar and curate our wine program.
We are seeking a motivated individual to take on the role of Head Sommelier at Tollbua and become part of the management team. The successful candidate will manage the wine cellar and wine programme, develop our competence, and create new paths to success. Working in a team created by Bocuse d’Argent winner Christopher Davidsen and five-time Norwegian Sommelier of the Year, Henrik Dahl Jahnsen, you will be in excellent hands and have one of the finest wine cellars in Trondheim to work with.
The Head Sommelier will also be responsible for daytime events as needed.
Typical responsibilities:
- Purchasing, inventory, and restocking of the wine cellar (and beverage refrigerators)
- Daily updating of wine menus and daily recommendations
- Leadership and training of the restaurant’s sommeliers and waiters
- Further development of the wine profile
- Working with and curating wine-related events (including maintaining relationships with and building networks with preferred suppliers, importers, and producers)
- Assisting in the restaurant on a daily basis
- Being a professional support for colleagues
- Working closely with the general manager and the bar manager
Desired qualifications and qualities:
- Relevant experience from similar positions
- High work capacity
- Great enthusiasm for the profession and guest experiences
- Ambitious and eager to learn
- Interest in economics and operations
- Experience with personnel management and scheduling systems
- Flexible and solution-oriented
- Proactive and energetic
- Good interpersonal skills
- Certified sommelier education from Norwegian schools or CMS
- Training and knowledge in beer and spirits is also a significant advantage
- It is desirable that you are fluent in both Norwegian and English
