South Wing Restaurant Manager  

Do you have the ambition, passion, and skill to join one of the most successful restaurant openings in Trondheim’s history? Since its launch in February 2024, Tollbua has been fully booked every week and has received rave reviews across the country and beyond. The South Wing has been a core component of that success, hosting everything from meetings and birthdays, to large prestigious events with international guests. 

The South Wing has revolutionalised the private dining market in Trondheim. With six purpose-built rooms, catering to parties of all sizes, it is the go-to choice for groups who place excellent food and drink at the heart of their event.

Tollbua requires an experienced hospitality professional to take the concept to the next level. The South Wing Restaurant Manager will have responsibility for daily operation of the event space, as well as guest acquisition and relationship management. We are looking for a self-starter, who is equally at ease speaking to potential guests as they are in delivering events which meet, and exceed, expectations. 

Typical tasks include:

  • Daily operation of the restaurant’s South Wing; booking, product ordering, customer management etc.
  • Personnel work with responsibility for hiring, training and roster, working in conjunction with Tollbua Restaurant Manager.
  • Development of South Wing concept, including marketing activities through individual and shared channels.
  • Financial responsibility with stock management, cost of goods and inventory etc.
  • Booking, event planning and guest follow-up from A to Z, ensuring guest experience meets expectation.
  • Relationship building and follow-up of corporate accounts, maintaining and developing guest database, encouraging repeat use of the space(s).
  • Participation in sales promotion activities, including business networks, conferences and other marketing opportunities. 
  • Assist with day-to-day operations within South Wing, including planning and participation in daytime and evening events, working in conjunction with South Wing maître d’. 
  • As a member of the leadership, you will be a resource to all colleagues in the restaurant and a major contributor to operations in all areas.

  • Relevant experience from similar positions
  • High work capacity
  • Great enthusiasm for the profession and guest experiences
  • Interest in economics and operations
  • Experience with personnel management and scheduling systems
  • Flexible and solution-oriented
  • Proactive and energetic
  • Good interpersonal skills
  • Familiarity with website management (WordPress)
  • Knoweledge and competance with Social Media work tools a positive (for example Canva, Adobe package)
  • It is desirable that you are fluent in both Norwegian and English
