Join us for a winemaker’s dinner with Chianti producer ISTINE (Società Semplice Agricola) on Thursday 11th November, 7pm

A rare and memorable evening awaits in Tollbua’s Sørfløyen. The Fronti family welcomes you into the world of ISTINE, a rising star in the heart of Tuscany’s celebrated Chianti Classico region. Set amid high-altitude vineyards around Radda in Chianti and Gaiole in Chianti, ISTINE was founded by the Fronti family and began bottling under its own label in 2009.
Their vineyards lie between 430–550 m above sea level, planted on rocky soils of Galestro and Alberese, which contribute to wines of freshness, elegance and terroir-depth. Since 2016, the estate has been certified organic, reflecting its commitment to nature, people and place.

On this unique evening at Tollbua, we will explore a beautifully crafted five-course menu designed to showcase the wines:
- Salmon tataki
Paired with: Rosato 2024 (100 % Sangiovese from ISTINE, fresh hillside fruit) - Reindeer tartar
Paired with: Chianti Classico 2021 (bright cherry, herbs, classic Sangiovese structure) - Mushroom Cappuccino
Paired with: Vigna Cavarchione Gran Selezione (estate single-vineyard from the Vertine/Gaiole side, a more powerful terroir expression) - Duck
Paired with: 550 Merlot IGT Toscano 2021 / Le Vigne Riserva 2021 (two special bottlings highlighting ISTINE’s broader vision) - Norwegian cheese
Paired with: Vermouth from the estate (a final indulgence to complete the journey)
