Christopher Davidsen
Tollbua Chef Patron, Christopher W. Davidsen, is renowned for the incredible flavour profile he brings to his cooking. He boasts extensive experience in the industry and has competed at the highest level, with accolades including both silver in the prestigious Bocuse d’Or, as well as a Michelin star as Executive Head Chef at Speilsalen.

Henrik Dahl Jahnsen
Henrik Dahl Jahnsen joined Christopher on the stage at the Michelin Awards as Speilsalen’s original Head Sommelier. He was also the recipient of Michelin’s inaugrial Nordic Countries Sommelier award. As five times Norwegian Sommelier Champion and the current president of the Norsk Vinkelnerforening, Henrik is a leading figure in Norwegian gastronomy.

In 2024 Henrik and Christopher launched Tollbua to great acclaim, serving Nordic gourmet bistro cuisine, down on the docks in Trondheim. Now they are teaming up again to deliver two consecutive nights of food and drink at the highest level.

Welcome to Chef’s Table 2.0, Tollbua edition.
At Speilsalen, Henrik and Christopher pioneered the concept of enjoying a five-star dining experience in close proximity to the chef’s. The coveted Chef’s Table seating at Britannia Hotel’s fine dining restaurant was a key component of the success which earned the pair a Michelin star after just nine months of operations.

Here at Tollbua they have pursued that philosophy at a more down-to-earth level, bringing you an open plan restaurant, where the country’s finest ingredients are prepared in an open kitchen. The same quality of cooking, in a less formal setting.
