Matigruppen AS is a newly established player in the food & beverage industry. With a big heart for our staff, one of our core principles is the setting new standards for restaurant employment.

At Tollbua, our mission statement is to retain our key personnel for a long time. We provide facilitation for further education, study stays, and development within the group.

Tuva Staff, 18, from Eidsvoll municipality, chose to join Tollbua “because of the people.”
“The restaurant is new and the food has a good reputation. The staff were very nice during my try-out and it felt like home immediately!”
“The coolest thing about my experience here so far is going out to the guests to present the food every night,” says Tuva. “I have never done that before, it made me nervous the first time, but now I feel like part of the team and I am used to it.”
Tuva’s apprenticeship at Tollbua will last two years. She was put forward by her teacher, but you can also apply directly to the restaurant.
Bocuse D’Or
At Tollbua you get the opportunity to work with award-winning professionals who are at the top of their game, and eager to share their vast knowledge and skills with you.
Chef Patron, Christopher Davidsen, won silver in the world’s most prestigious cooking competition in 2017: Bocuse d’Or. He went on to coach Team Norway in 2023, with the candidate Filip August Bendi also bringing home the silver trophy!
This year, Chef Davidsen is coaching Norway candidate (and Davidsen’s previous commis chef) Håvard Werklend in pursuit of more glory. The commis chef for Team Norway in Lyon this month, is Grunde Gillund, also of Tollbua.
The commis is a chef under 23 years of age, who contributes throughout the entire competition process. During the competition Grunde will be an integral part of a team, which has five and a half hours to prepare a ‘plate’ and a ‘dish’, to exacting standards,
The commis performs all the tasks on an equal footing with the candidate, so the expectations and skill level required is very high
Competition
There are not may chefs in the world who have experience of competing at this level. There are many doors opened by working alongside and learning from Chef Davidsen at Tollbua, and the expert team he has built in the kitchen.
In 2024 Tollbua put forward young chef Ivo Gaseroff for the San Pelligrino Young Chef Academy 2024-2025. It required many months of training. Ivo not only received expert tuition Christopher Davidsen, but received paid leave from his duties in the kitchen, access to the facilities in the training kitchen to develop his menu, and support to find sponsorship.
“When we started the training Christopher and I had different ideas but found common ground in ingredients which connected Bulgaria and Norway,” explains Ivo. “He helped me find sponsorship for particular products, and connected me with big retailers like Bama and Nortura.”
“It’s been magical to use the same boards and plates he used at Bocuse, as well as gaining from his experience and tips through all the training.”
At Tollbua, we are proud to name Eli Anne Sundset, winner of Young Chef of the Year 2023, as one of our team.
Pictured above, Eli Anne was influential in assisting the young chefs who came into the kitchen to learn our trade during 2024 Ung Restaurant competition. In 2025 we will be putting Eli Anne forward for the prestigious Årets Kokk competition!
Front of House
Leading the front of house team, general manager and Food & Beverage Director for the group, Henrik Dahl Jahnsen. The sommelier was also part of Chef Davidsen’s team when they won their previous restaurant, Speilsalen, a Michelin star. Dahl Jahnsen is five times Norwegian sommelier champion, and is the president of the Norwegian Sommelier society.
Under Henrik’s supervision, waiters, bartenders and sommeliers at Tollbua can learn to participate in a team with a winning mentality.
Markus Ringstad is being supported by Tollbua to take his education as a sommelier. For a workplace which supports you in your career development, while giving you first-hand experience of a dynamic hospitality establishment, there is no better place than Tollbua!
